When you are texting there is an option to press the microphone icon and speak your message and it will transcribe it for you. I recently got a Samsung Galaxy A51 and noticed that it was set up with Samsung’s speech to text instead of Google’s speech to text. This video explains how to switch this setting so that you get the Google speech to text option instead of the Samsung one. I tried using the Samsung one but it was just not as good as the Google one so I looked through the settings and figured out how to change it.
